Monascusis an important microbial
resource in China, which can produce a variety of bioactive metabolites. It is
widely used in the production of liquor, yellow wine and health wine.In this
paper, the research status ofMonascusand its related metabolites in
liquor, yellow wine and health wine was summarized, on the basis of analysis ofMonascusapplied to problems in liquor-making industry, and puts forward
Suggestions on problems and prospect, in order to provide theoretical basis for
further exploitation and utilization ofMonascusresources and reference
value.
