Abstract

卵磷脂广泛存在于自然界，是重要的功能性成分之一，对其进行高效分析具有重大意义。食品中卵磷脂含量的检测方法主要有紫外可见分光光度法、薄层色谱法、高效液相色谱法、核磁共振波谱法、红外光谱法和质谱分析法等6种方法，分别对以上6种方法进行概述，并对各自方法的优缺点进行了初步探讨，旨在为从事食品中卵磷脂检测技术研究提供参考。
