The pH indicator film was prepared with betacyanins as an indicator, cassava starch (CS) and peanut shell cellulose (PSC) as film substrates through the film casting method.The performance of the pH indicator film was characterized and analyzed including the effects of different beet red pigment content on the thermal stability, mechanical properties, optical properties, water content, water solubility and pH sensitivity of the pH indicator film.The excellent compatibility of betacyanins with CS and PSC and cross-linking stability were confirmed by Fourier transform infrared spectroscopy and scanning electron microscope analysis.It found that the thermal stability, UV light barrier, elongation at break, and water swelling ratio (33.54% to 45.94%) of pH indicator film were improved and the moisture content (15.33% to 13.00%) and tensile strength (7.69 MPa to 2.22 MPa) pH indicator film were reduced by betacyanins (40% of cassava starch, mass fraction), especially.However, the melting point rose from 105 ℃ to 125 ℃.This indicator film had excellent pH sensitivity.It was dark red in an acidic environment, wine red in a neutral environment, and yellow/purple in an alkaline environment.The color difference was greater than 5 and visible to the naked eye.The results showed that the pH indicator film with betacyanins had great potential.
