Abstract

With the increasing improvement of the living standards of Chinese residents, consumers are increasingly concerned about food quality and food safety-related issues. The chicken is delicious and inexpensive, which is deeply loved by consumers. To meet consumers' demand for chicken supply, the poultry industry blindly pursues a rapid release rate, resulting in a series of muscle defects in chickens. The highest incidence of white striping (WS) and woody/wooden breast (WB) currently has the most serious impact on the poultry industry and consumers. The commonly used methods for distinguishing white striping and woody/wooden breast are visual observation and sensory touch. These methods have several disadvantages including subjectivity, low efficiency, and complexity.Chemical experimental methods will cause pollution to chicken samples, which is obviously not suitable for the subsequent rapid, online detection and sorting. In recent years, the non-destructive detection technique has developed rapidly and has been widely employed in the field of food quality and safety detection due to its rapid, accurate, and safe characteristics. This article reviewed the latest research progress in non-destructive detection techniques such as near-infrared spectroscopy, machine vision, and hyperspectral imaging in the detection of white striping and woody/wooden breast at home and abroad in recent years, and then summarized and prospected the current problems and future development perspectives of these techniques. The aim of this research is to provide references for meat food quality and safety detection in China.
