Abstract

Lactiplantibacillus plantarum is a kind of traditional lactic acid bacteria distributing in different environments such as vegetables and fruits.It can synthesize a series of exopolysaccharides(EPS) with different structural characteristics and biological activities, which is of great significance for the improvement of food quality and function.In this paper, the research progress of EPS from L. plantarum was reviewed from the aspects of biosynthesis, separation, purification and yield optimization, and the latest research on the structure, rheological properties and biological activity of EPS from L. plantarum was also summarized.
