Abstract

Oligosaccharides from edible-fungi are important resources of natural oligosaccharides.The crude oligosaccharides were obtained from water extraction and ethanol sinking.Then the sugars were separated and purified by anion exchange and gel filtration chromatography into two kinds of Hericium erinaceus Oligosaccharides.One is water-soluble oligosaccharide EOF-W-B and the other is salt-soluble oligosaccharide HEOF-0.1.The analysis of acetylation,ESI-MS and GC-MS were used to work out the structure of the oligosaccharides and HEOF-W-B was a small oligosaccharide with a molecular mass of 414 u and consisted of three Arabinoses.
