Abstract

Spectrum analysis has been widely used in the research of starch in recent years.This paper focused on the application of FTIR,NMR and UV/Vis in the field of starch structure and chemistry analysis,especially in granule structure,gelatinization process,starch hydrolysis and modified starch analysis.The paper will provide detailed information for further application of starch and its derivatives in different fields.
