Study on Antioxidant Activities of Polysaccharide from Barley Malt Roots

Abstract

Antioxidant activities of polysaccharides from barley malt roots by aqueous-extraction and alcohol precipitation were studied.The crude extracted polysaccharides were classified by 50% and 80% of ethanol into BCP50 and BCP80.The antioxidant capacity of the polysaccharides was measured by spectrophotometry on its ability of scavenging 1.1-diphenyl-2-picrylhydrazyl(DPPH·),hydroxyl radical,reducing power and the antioxidant capability on fat and oils.The results revealed that BCP80 and BCP50 had free radical-scavenging ability and BCP80 was better than BCP50.
