Physico-chemical Properties of Non-crystalline Granular Corn Starch by Semidry Process

Abstract

Non-crystalline granule corn starch was prepared with native corn starch by semi-dry method.The effect on physicochemical properties of non-crystalline treatment wwas studied,such as granule appearance,granule diameter,crystallinity,rheological properties,retrogradation.The results showed that there were pores in the surface and the surface was rough.Pits also were observed in the hilum.When the median size and equivalent volume diameter increased,both small and large granules were swelled.The x-ray diffractogram showed that the peak decreased significantly except at 20°showing increase.The start temperature of gelatinization increased with decreased of viscosity.The stability of hot paste and cold paste were improved,but retrogradation became weak.
