Research on Inhibition of Extracts from Olong Tea and Puer Tea on α-Amylase from Porcine Pancreas

Abstract

Inhibition of the extracts from Olong tea and Puer tea on α-amylase from Porcine Pancreas and the kinetics were studied in this paper.Dixon plotting method was used to identify the inhibition pattern of the extracts.The result showed that the Ki of the extracts were 3.96 mg/mL and 13.30 mg/mL for Olong tea and Puer tea seperately.The inhibitory pattern of the both tea extracts belong to reversible non-competitiveness.
