The Effect of Double Proteases Multi-hydrolysis on Antioxidant Activities of Corn Peptides

Abstract

The proteases(Neutrase,Alcalase,Protamex,Flavourzyme) were used to perform multi-hydrolysis of high corn gluten meal concentration(24%),and the effects of double proteases on hydrolysis efficiency of corn pro-tein and antioxidant activities of corn peptides were studied.The result showed that the hydrolysis efficiency of double proteases was better than that of single protease,and Flavourzyme combining with Alcalase was the optimal design.In this condition,the degree of hydrolysis was increased 26.85%.The efficiency of hydrolysis was not positive correla-tion to the antioxidant activities of corn peptides.The scavenging rate of hydroxyl radical was 90% ~ 100%,equiva-lent to the effect of 5% Vitamin C solution.The multi-hydrolysis of double proteases had an obvious influence on the clearance rate of superoxide anion and DPPH radical of corn peptides,while the changes in the clearance rate of su-peroxide anion were contrary to that of DPPH radical.
