Abstract

With the continuous changing in lifestyle and dietary structure, the morbidity of diet-related sub-health and chronic diseases among Chinese residents rise rapidly, such as obesity, hyperlipidemia, hypertension, diabetes, and cardiovascular and cerebrovascular diseases. Studies show that severe fluctuation of blood glucose caused by high sugar or high starch foods is an important reason for the high incidence of obesity and chronic disease. Therefore, it is essential to develop low glycemic index (GI) foods or diets for human health. In this review, the research and development progress of low glycemic index foods, including cereal, potatoes, and fruits were summarized. The clinical application status of low glycemic index foods in chronic disease and other diseases was introduced. The development trend of low GI foods prospected.
