Effect of precise temperature control on postharvest physiological quality of Aksu apples

Abstract

To explore the effect of precise temperature control on the storage characteristics and quality of apples, Aksu red Fuji apple was used as the research object to explore the effects of (-2±0.5), (0±0.5), and (2±0.5) ℃ of storage temperature on postharvest physiological quality of Aksu red Fuji apple. Results showed that -2 ℃ significantly inhibited the respiration intensity, reduced the respiration peak of Aksu apples, maintained high soluble solids and titratable acid content, and delayed the decline of hardness. The decrease in storage temperature was beneficial to increasing the activity of peroxidase and reducing the damage caused by free radicals and the accumulation of malondialdehyde. Under -2 ℃ of storage temperature, the activity of polyphenol oxidase was inhibited, and the disappearance of "sugar core" was slowed down, which maintained a high percentage of sugar core fruit and good quality.
