Research progress of electrochemical sensors based on specific recognition elements for heavy metal detection in food

Abstract

Heavy metal contamination is one of the major causes of food safety problems. However, the heavy metal detection system is complex and there are many interfering factors. Therefore, it is crucial to develop efficient, interference-free and easy-to-use methods for heavy metal detection. Electrochemical sensing technology is easy to use, highly sensitive and has a fast response time, making it widely used in heavy metal detection. Combining specific recognition elements with electrochemical sensing technology can further improve its anti-interference ability in detecting heavy metals in actual samples. Therefore, this paper reviewed the specific recognition elements, including DNAzyme, aptamer and ion-imprinted polymer, and their differences. It also introduced the application of electrochemical sensors based on specific recognition elements in the detection of heavy metals (mainly Pb2+, As3+, Cd2+, and Cr3+/6+) in food. In addition, the paper provides prospects for the application of specific recognition elements in the field of heavy metal detection, providing a reference for future research.
