Advances in Raman spectroscopy detection for the biofilm of foodborne pathogens

Abstract

Biofilms is a form of bacterial survival and persistence that flora enfolded by its produced extracellular polymers substances (EPS). The biofilm of foodborne pathogens is difficult to detect and eliminate, which may raise the risk of food-borne diseases and compromise food safety by releasing pathogen cells into foods and environments. Raman spectroscopy is a real-time,non-destructive detection technology, which has been used in the detection of biofilm. This paper introduces the progress of obtaining and analyzing biofilm information using Raman spectroscopy. Then we summarized the relationship between the representative Raman characteristic peaks and the contents of carbohydrates, lipids, proteins, nucleic acids, and other biological macromolecules in EPS, as well as their changes under stress. The future detection on biofilm is also discussed by considering the combination of Raman spectra with other detection techniques. Although accurate detection for the biofilm of foodborne pathogens by Raman spectroscopy remains challenges, its application in food microbiological safety can be further expanded by standardizing and quantifying the detection procedure.
