Progress on stress resistant phenotype and related functional genes of persistent Listeria monocytogenes

Abstract

Facing several unfavorable conditions, such as low temperature, dryness, low pH, and sublethal concentration of disinfectant, Listeria monocytogenes can evolve into a tolerant strain through genetic regulation or physiological adaptation, and eventually develop into a persistent strain. Once L. monocytogenes remains in the food processing environment, it can repeatedly contaminate food, thus posing a huge risk to human health and social economy. This article first introduces the definition of persistence and persistent strains, and sorted out the outbreak events caused by the pollution of persistent L. monocytogenes in recent years. The article also further summarizes the phenotypes and related gene characteristics affecting the persistence of L. monocytogenes from the aspects of biofilm forming ability, tolerance to disinfectants, heat resistance, and acid resistance. To explore the reasons for the persistence of L. monocytogenes in the food processing environment will help to control the spread of L. monocytogenes in the food processing chain and provide some reference for the prevention and elimination of L. monocytogenes.
