Abstract

Photodynamic anti-microbial technology (PDAT) is a non-thermal sterilization technology based on the combination of light source, photosensitizer and molecular oxygen. With the emergence of drug-resistant pathogens and spoilage bacteria, the development and application of an innovative sterilization technology with high safety and efficiency is imminent. Due to the multi-target action mode of PDAT, it is considered to be a potential method for the control of harmful microorganisms. This paper summarizes the selection of photosensitizers and light sources, antibacterial effect, antibacterial principle and its application in different kinds of food preservation, providing new ideas for the killing of foodborne pathogens and spoilage bacteria by PDAT, together with its application and future development in food preservation.
