Abstract

Lipidomics is a branch of metabolomics, and it has been a new rapidly growing omics field in recent years. The research of lipidomics focuses on the composition and dynamic changes of lipid molecules in biological matrix and explains the metabolism and regulation mechanism of lipids in organisms. Meat is one of the main sources of nutrition in our daily life, and lipid is one of the main components of meat. Therefore, analyzing the lipids in meat through lipidomics to judge the quality of meat and the changes during processing and storage can help us research the functional characteristics of meat. This paper briefly described the available detection techniques of lipidomics and its application in the fields of meat safety, quality identification, and nutritional function to provide a theoretical basis for the wider application of lipidomics in meat.
