Abstract

Gellan gum is a bacterial exopolysaccharide produced by Sphingomonas paucimobilis, which has good heat resistance, acid resistance, and superior gelation properties. It is widely used in food, pharmaceutical, and chemical industries. However, there are few studies on the biosynthesis and metabolic regulation of gellan gum. We summarize the biosynthetic pathway and metabolic regulation of gellan gum production by S. paucimobilis, which is expected to provide a theoretical basis for the modification of gellan gum production strains.
