In this study, algae oil microcapsules were prepared by freeze-drying method with glycosylated gelatin as the protective material.Algae oil microcapsules MG, OG, MOG, and GE were prepared using maltodextrin-gelatin glycosylated products, oligomannose-gelatin glycosylation products, a mixture of two kinds of glycosylated gelatin (1∶1), and gelatin (as control) as wall materials.The basic physical and chemical properties of microcapsules were determined, and the freeze-thaw stability, rehydration, and oxidation stability of both microcapsules and their emulsions were investigated.Results showed that the algae oil microcapsule MOG had the highest embedding rate of algae oil at 93.45%, and the rehydration, freeze-thaw stability, solubility, and dispersibility of the emulsion were good.With the extension of storage time, the increase in peroxide value and the decrease in DHA retention rate of MOG were the slowest, and the predicted shelf life was the longest.This study demonstrated that combining two glycosylated gelatins could enhance the protective properties of algal oil microcapsules as the wall material for encapsulating algal oil microcapsules.It provides a scientific foundation for the comprehensive development and utilization of algal oil microcapsules.
