Abstract

Suansun are deeply cherished by consumers due to their distinctive texture and flavor. To investigate the variations in quality of suansun under different fermentation methods, this research employed liquid chromatography-mass spectrometry to analyze the metabolic differences between naturally fermented Suansun (NFS) and Lactiplantibacillus plantarum -inoculated fermented Suansun (LPS).The results showed that, compared with NFS, a total of 523 differential metabolites were annotated for LPS, among which 284 were up-regulated and 239 were down-regulated.Organic acids and their derivatives (19.5%), organic heterocyclic compounds (18.55%), and benzene compounds (9.18%) were the major types of differentially expressed metabolites between NFS and LPS.According to the Kyoto Encyclopedia of Genes and Genomes for pathway analysis, the biosynthesis of plant secondary metabolites was the pathway with the highest enrichment of differentially expressed metabolites. The biosynthesis of teichoic acid, the metabolism of alanine, aspartate, and glutamate, and the metabolism of glycine, serine, and threonine were the key junctions causing the metabolic differences between NFS and LPS.L-cysteine, glutamate, L-serine, and 2-amino-3-methylbutanedioic acid were common metabolites in both types of metabolic pathways, serving as potential key regulatory nodes and the main reasons for the metabolic differences between NFS and LPS.This study explored the differentially expressed metabolites and metabolic pathways of NFS and LPS, aiming to provide a theoretical foundation for the quality control of suansun.
