Simultaneous Determination of Organic Acids in Wine with Reverse-phase High Performance Liquid Chromatography

Abstract

This paper established a method using RP-HPLC simultaneously and rapidly detecting of tartaric acid,formic acid,malic acid,lactic acid,acetic acid,citric acid,succinic acid in rice wine and grape wine.The optimal separation conditions:the XB-C18(5μm,150mm × 4.6mm)ultraviolet detector,wavelength 210 nm,mobile phase 0.02M KH2PO4-acetonitrile(98:2),pH 2.3,flow rate 1.0 ml/min,column temperature 30℃,injection of 10.0μl,Isocratic elution.The recovery rate ranged from 83.17 to 117.3%,and the relative standard deviations are 3.1%~5.8%.Reverse-phase high performance liquid chromatography can determine the organic acid in yellow rice wine and wine rapidly,which satisfy enterprises needs for real-time monitoring and quality control.
