Study on the Risk of Pollution Level of Harmful Metallic Elements in Spiced Duck Liver

Abstract

Heavy metals in Spiced Duck Liver was analyzed by Inductively Coupled Plasma Atomic Emission Spectrometry(ICP-AES),and the risk was evaluated.The recovery was between 96.2% and 103.5%,RSD was 0.360 1%~2.214% and the detection limit was 0.001 8~0.034 2μg/mL.The method was accurate and precise.The result indicated that the Spiced Duck Liver from retail stall had higher content of Cu and Pb,and the concentrations of cuprum and plumbum element were over 20 mg/kg and 0.6 mg/kg,respectively.It may have the pollution risk of excessive intake of cuprum and plumbum element.Excessive consumption of Spiced Duck Liver may affect people's health,and children should not eat too much.
