Relationship Between Chilling Injury and Post-harvest Physiology,Storage Quality in Nectarines

Abstract

This paper studied the changes of the extractable juice,respiration rate,cellulose content,ethylene production and so on of nectarines at the chilling injury temperature.The results showed that relative membrane permeability enhanced significantly,chilling injury induced the decomposition of respiration and ethylene production,and brought the appearance of respiration peak and the ethylene peak 10 days earlier than control.The firmness and cellulose content increased abnormally when chilling injury happened.Chilling injury accelerated the degradation of soluble protein and chlorophyll.
