The Analysis for Lactic Acid Bacteria Encapsulation Methods

Abstract

In order to develop the high-activity lactic acid bacteria carrier particles,we used Lactobacillus bulgaricus as study object and agar and sodium alginate being the cell encapsulation materials respectively.This article focuses on the following conditions: cell encapsulation,carrier preparation and carrier culture and so on.The results show that: the encapsulation effect by sodium alginate is better than agar and the optimum culture conditions is : 1% sodium alginate solidified by1% CaCl2;with placing the carrier into the culture medium containing 1% CaCO3,41℃ and 20 hours more or less,total viable count in the carrier is up to 2.2×1011CFU/g.
