Abstract: Food-derived chelating peptides have chelating activity on mineral elements and can improve the bioavailability of mineral elements. Peptides with calcium binding activity can effectively transport calcium ions through intestinal epithelial cells and then be absorbed by body. The preparation, isolation, purification, structure characteristics, physiological activity and bioavailability of food-derived calcium chelating peptides were summarized to provide reference for research and development of calcium supplement products and for efficient, high-value and sustainable development and utilization of the calcium resources in China.
