Abstract: Staphylococcus aureus is one of the most common pathogens causing food poisoning, early and rapid detection of food contamination is the key to food safety and quality control. Traditional detection technologies are complicated and time-consuming, this article introduces current applications from the aspects of physiological and biochemical technology, immunoassay technology, molecular biology technology, protein-based detection technology and biosensors, etc. The rapid detection technology is expected to provide ideas for the selection and development of food-borne S. aureus rapid detection methods.
