摘要 金黄色葡萄球菌是引起食物中毒的常见致病菌之一,食物污染的早期快速检测是食品安全和质量控制的关键。传统检测技术操作繁琐、耗时较长,该文从生理生化技术、免疫分析技术、分子生物学技术、基于蛋白质的检测技术和生物传感器等方面,介绍了几种当前应用最为广泛和极具研究前景的快速检测技术,以期为食源性金黄色葡萄球菌快速检测方法的选择及研发提供思路。

Abstract: Staphylococcus aureus is one of the most common pathogens causing food poisoning, early and rapid detection of food contamination is the key to food safety and quality control. Traditional detection technologies are complicated and time-consuming, this article introduces current applications from the aspects of physiological and biochemical technology, immunoassay technology, molecular biology technology, protein-based detection technology and biosensors, etc. The rapid detection technology is expected to provide ideas for the selection and development of food-borne S. aureus rapid detection methods.
