Abstract: Pediocin is often described as small,heat-stable,unmodified peptides.This antimicrobial peptide is a broad-spectrum lactic acid bacteria bacteriocin that shows a particularly strong activity against Listeria monocytogenes.This review focused on the progress that has been made in the development of its Purification and Stability.The problem that exist in the research of pediocin also been discussed.
