微波-双酶耦合催化淀粉水解

摘要

以玉米淀粉为反应底物,研究了α-淀粉酶和糖化酶分别在微波场和水浴条件下水解玉米淀粉的特性。考察pH值、温度、底物浓度、时间和微波功率对淀粉水解率的影响。结果表明,微波-双酶耦合催化淀粉的水解率比水浴加热提高20%以上。

Abstract

The corn starch hydrolysis with αamylase and glucoamylase under the condition of microwave irradiation and water bath was studied.Investigation on the ratio of the corn starch hydrolysis to pH,reaction temperature,substrate concentration,reaction time and the microwave power showed that the ratio of starch hydrolysis under microwave irradiation increased at least 20 percent compared with that in water bath.
