研究了油茶果壳多糖抗氧化活性并对单糖组成进行了分析。以油茶果壳为原料,热水浸提得到油茶果壳多糖,并应用DPPH法、TEAC法以及油脂抗氧化体系测定评价油茶果壳多糖的抗氧化能力,采用气相色谱(GC)分析单糖组成。结果表明:油茶果壳多糖具有较好的清除自由基的能力和一定的油脂抗氧化能力,多糖的抗氧化能力与浓度呈正相关,当多糖浓度分别为25μg/mL和20μg/mL时,对DPPH和ABTS自由基的清除率分别达到67.72%、65.96%;当多糖浓度为20mg/mL时,对山茶油的保护因素达到1.58。对油茶果壳多糖进行气相(GC)分析得出,油茶果壳多糖由以下6种单糖组成:鼠李糖、岩藻糖、阿拉伯糖、甘露糖、葡萄糖以及半乳糖,各自所占的比例依次为:6.65%、19.07%、2.67%、7.05%、48.76%及15.78%。
The antioxidant activity of polysaccharides from the fruit shell of Camellia oleifera Abel and its monosaccharides components were studied.Using the fruit shell of Camellia oleifera Abel as raw material,the content of polysaccharides was determined by the method of phenol-sulphate acid.The antioxidant activity of the polysaccharides of fruit shell of Camellia oleifera Abel was determined by DPPH assay,TEAC assay and lipid antioxidation system,respectively.The monosaccharides were further analyzed by GC after being hydrolyzed.The results showed that the polysaccharides of fruit shell of Camellia oleifera Abel had good capability on scavenging the radicals and lipid oxidation.The scavenging capability is concentrations-related.The scavenging rate of DPPH radicals is 67.72% at the concentration 25 μg/mL polysaccharides,while the scavenging rate of ABTS radicals is 65.96% at the concentration 20 μg/mL polysaccharides.The prevention factor is 1.58 at the concentration 20.0 mg/mL polysaccharides.The polysaccharides contained rhamnose,fucose,arabinose,mannose,glucose and galactose in the percentage of 6.65%,19.07%,2.67%,7.05%,48.76% and 15.78%.
