以糯米为原料,红曲与酒药为糖化发酵剂发酵生产功能性红曲保健黄酒。试验结果表明,红曲保健黄酒最佳生产工艺为:红曲质量分数7.0%,酒药质量分数0.8%,投料品温32℃,发酵温度28℃,发酵周期10d,80℃灭菌10min。成品酒呈宝石红色泽,醇厚爽口。
Glutinous as raw material and red starter,Chinese yeast as ferment to produce red yeast rice health Chinese rice wine by fermentation technology.The results showed that the optimal fermentation conditions were as follows:red yeast rice 7.0%,Chinese yeast 0.8%,water 100%,the initial mash temperature 32℃,fermentation temperature 28℃,fermentation time 10d,sterilize temperature 80℃ for 10min.Finished wine was ruby red,mellow tasty,nutritious and healthy.
