半干法制备的非晶颗粒态玉米淀粉的物化性质

摘要

以玉米淀粉为原料,采用半干法制备非晶颗粒态淀粉。研究了非晶化处理对玉米淀粉颗粒形貌、颗粒粒径、结晶性质、布拉邦德曲线、凝沉性等物化性质的影响。结果表明:颗粒表面出现小孔,变得粗糙,脐点处出现凹坑;颗粒的中间值和等效体积粒径增加,小颗粒和大颗粒均在非晶化中发生膨胀;X射线衍射图样显示,峰值大幅度降低,但衍射角20°时,具有峰值增加的特征;起始糊化温度增高,黏度降低,耐高温能力上升,热糊稳定性和冷糊稳定性均好,但凝沉性变差。

Abstract

Non-crystalline granule corn starch was prepared with native corn starch by semi-dry method.The effect on physicochemical properties of non-crystalline treatment wwas studied,such as granule appearance,granule diameter,crystallinity,rheological properties,retrogradation.The results showed that there were pores in the surface and the surface was rough.Pits also were observed in the hilum.When the median size and equivalent volume diameter increased,both small and large granules were swelled.The x-ray diffractogram showed that the peak decreased significantly except at 20°showing increase.The start temperature of gelatinization increased with decreased of viscosity.The stability of hot paste and cold paste were improved,but retrogradation became weak.
