建立了气相色谱-质谱同时测定食醋中6种多元醇的方法。样品经乙腈提取,将葡萄糖肟化,降低了葡萄糖在乙酰化过程缩聚产物产生的基体干扰,6种多元醇经乙酸酐乙酰化后检出限为0.020 mg/L,样品加标回收在93%~105%,RSD在2.8%~10.5%。采用建立的方法对山西老陈醋、镇江香(陈)醋、白醋、普通陈醋等样品进行分析。实验结果表明:山西老陈醋中赤藓糖醇的含量明显高于其他食醋,而白醋中多元醇含量极低。进行食醋中多元醇的分析将有助于食醋地理标志保护产品的鉴定。
The determination of polyalcohols in vinegar by GC-MS was developed.The vinegar sample was extracted by acetonitrile and the oximation was introduced for reducing matrix interference,which was derived by glucose condensation while the acetylation was going with acetic anhydrid.The limit of the method was 0.020mg/L,the recoveries was between 93% and 105%,with RSD between 2.8% and 10.5%.The test result showed: the content of erythritol in Shanxi extra aged vinegar was more than others,and there was few polyalcohols detected in alcohol vinegar.The determination of polyalcohols should help identify geographical indication vinegars.
