摘要

综述了黄酒的营养价值和黄酒饮后引起"上头"、"上火"等不适反应的物质基础;其中引起"上头"的成分主要包括乙醇、杂醇油、醛类等,而黄酒中营养素的含量和比例是黄酒是否引起"上火"反应的主因;最后根据其物质基础提出初步的解决方案。

Abstract

Rice wine is regarded as the national banquet wine and is widely known for its health benefit.This ar-ticle mainly reviewed the nutritional value of rice wine and the material bases of uncomfortable reactions(such as "Headache & Dizziness"and"Excessive Internal Heat") after drinking rice wine.The main factors that cause "Headache & Dizziness"were alcohol,fusel oil,aldehydes and so on;the contents and radios of nutrients in the wine were the principal causes that tended to set off "Excessive Internal Heat"reaction.The paper concluded with the proposal of a preliminary solution based on material ground.
