叶黄素具有营养强化和着色的双重功能,但其性质不稳定,且不溶于水。以改性淀粉为壁材制得的叶黄素微胶囊具有较高的微胶囊化效率和保留率,最佳工艺条件为:均质压力40MPa、进风温度为195℃,产品的微胶囊化效率高于90%。在45℃贮存40d,微胶囊产品中叶黄素保留率高于85%。叶黄素微胶囊产品的玻璃化转变温度为91.6℃,因而微胶囊化叶黄素在室温下具有良好的贮存稳定性。
Lutein has its physiological function and is a natural pigment,but the lipophilic and unstable character of lutein limit its application.It was found that the microencapsulation of lutein with modified starch as the wall material has higher microencapsulation efficiency and retention ratio.The optimum parameters of the process were:homogeneous pressure 40 MPa,the inlet air temperature 195℃.The microencapsulation efficiency of lutein was above 90%,and the retention ratio of lutein was 85% higher after storage at 45℃ for 40 days.The glass transition temperature of lutein microcapsule products was 91.6℃,which was higher than the room storage temperature.Thus it ensured the microencapsulated lutein had a better storage stability.
