Inulin fructotransferase is an enzyme which hydrolyzes inulin into DFA III.In this paper,the screening of inulin fructotransferase-producing strains,fermentation of inulase II,isolation and purification,enzymatic properties,physiologic functions of its enzymatic product(DFA III) were reviewed.
