As a resource-rich and functional food ingredients,dietary fiber has many important physiological functions,which can prevent constipation,colon cancer,obesity,cardiovascular disease,diabetes and other chronic disease.In this paper,analysis methods of dietary fiber are reviewed to introduce the traditional methods as well as Near-Infrared Reflectance Spectroscopy(NIRS),size exclusion liquid chromatographic method(SEC),high-performance anion-exchange chromatography(HPAEC) and other modern instrumental analysis methods.The purpose is to provide necessary references to speed the study process of dietary fiber of our country.
