In this paper,the 1H-NMR technique were used to detect the concentration of vegetable protein beverage and T2 were obtained by CPMG pulse sequence.The results showed that 1H-NMR technique can be used to detect the change of fat and water content of vegetable protein beverage.T22 reflects the variation of fat content.T23 reflects the variation of water content.With the decrease of peanut milk concentration,T22 integral proportion decreased while T23 integral proportion increased.The fat content and the water content of vegetable protein beverage can be forecasted by regression equation to quickly and accurately determine whether the quality of the sample in line with national standards.
