摘要 西兰花属于呼吸跃变型花菜类蔬菜,对乙烯敏感,采后花蕾极易开放萎蔫、黄化和腐烂。1-甲基环丙烯(1-methylcyclopropene,1-MCP)是一种乙烯作用抑制剂,在果蔬采后贮藏保鲜中得到了广泛应用并取得了显著效果。该文查阅国内外有关1-MCP在西兰花贮藏保鲜中的研究,分析归纳1-MCP的作用机理和经过1-MCP单独处理后西兰花的呼吸代谢强度、果蔬品质、乙烯合成速率及各种酶活性的变化规律,以及1-MCP处理结合其他贮藏保鲜方法在西兰花贮藏保鲜中的应用情况,以期为1-MCP在西兰花贮藏保鲜中的应用和研究提供参考。

Abstract: Broccoli is a typical climacteric vegetable that is very sensitive to ethylene. The buds open easily, at the same time they become wilting, yellow and rotting. 1-MCP(1-methylcyclopene)is a kind of ethylene action inhibitor, which has been widely used in post-harvest storage of fruits and vegetables. This review focuses on the mechanism and effect of 1-MCP on post-harvest ripening of broccoli, including biochemical and physiological indices such as respiration rate,ethylene production, fruit quality and enzymatic activity, etc. In addition, the application of 1-MCP in combination with other preservation methods is also introduced. The purpose is to provide references for the application and research of 1-MCP in broccoli storage.
