摘要

在2种模拟胃液条件下对3种红豆多肽清除亚硝酸盐及阻断N-二甲基亚硝胺(NDMA)合成进行了研究。结果表明:随反应浓度提高,红豆多肽对亚硝酸盐的清除能力和阻断NDMA合成能力有明显提高,不同的红豆多肽、反应时间、模拟胃液条件下效果有一定差异。其中木瓜蛋白酶制备的红豆多肽在模拟胃液B下的效果最好,浓度为1%,时间为1h时对亚硝酸盐的清除率达到100%,对NDMA合成的阻断率达到81.87%。

Abstract

The nitrite scavenging activity and N-nitrosodimethylamine(NDMA)interdiction activity of three kinds of red bean peptide was studied in two kinds of simulated gastric fluid.The result showed that with the increase in concentration,the rate of nitrite scavenging and nitrosamine interdiction was increased markedly;there were some different effects on the different of red bean polypeptide,reaction time and simulated gastric fluid.Red bean polypeptide prepared by papain and reacted in the simulated gastric fluid B had the best effectiveness.When the concentration was 1% and the reaction time was 1 h,the rate of nitrite scavenging and nitrosamine interdiction was reached up to 100% and 81.87%,respectively.
