摘要

为了有效解决番茄酱(尤其是销往热带地区的番茄酱)制品发生产气变质的实际问题,文中系统分析了产气变质原因,提出贯穿种植、生产、检测、贮存、运输全过程的微生物控制方案。

Abstract

In order to solve the practical problem of aerosis deterioration of tomato paste products which sold to tropical regions,causes of aerosis metamorphic were analysed syste mLy,and the program of microbial control throughout the whole process,cultivation,production,storage,and tansport,was putted forward.
