为获得接近母乳的婴儿配方食品的蛋白基料,采用胰蛋白酶对脱脂乳蛋白进行水解并分析水解过程中和模拟婴儿胃环境下粒径和凝块的变化,并将其与母乳进行比较。采用激光粒径仪和扫描电镜分析水解过程中及模拟婴儿胃环境下乳蛋白的宏观和微观变化,并分析水解液的分子量分布。结果表明:胰蛋白酶水解的最适条件为45℃,E/S为0.5%下水解1h,此水解条件下乳蛋白水解物在模拟婴儿胃环境下形成凝块的宏微观结构与母乳最为接近。用胰蛋白酶水解乳蛋白可获得类母乳蛋白基料。
For the purpose of producing humanized protein raw material for infant formula,trypsin was used for hydrolyze and the change of particle size in skim milk protein and clot caused in the simulated environment of infant stomach during hydrolysis were studied,and compared with breast milk.Laser particle analyzer and scanning electron microscopy were adopted to compare macro and micro change during hydrolysis in simulated environment of infant stomach,and also molecular weight distribution of hydrolyze was analyzed.The results showed that the optimal condition for trypsin hydrolysis was 45 ℃,e/s 0.5% and hydrolysis 1h.Under this hydrolysis conditions,the clot of milk protein hydrolysates formed in simulated gastric environment was closest to breast milk on macro and micro structure.So humanized protein raw material could be produced by trypsin hydrolysis.
