香菇不同部位醇提物的抗氧化活性

摘要

研究了香菇不同部位用体积分数75%乙醇提取物的抗氧化活性。通过测定油脂过氧化值,清除·OH、O2-·自由基能力及还原能力4种抗氧化体系,比较不同部位醇提物的抗氧化活性。结果表明:不同部位醇提物在4个体系中都具有较强的抗氧化性,在不同体系中的抗氧化能力不相同;化学预试表明,香菇不同部位醇提物中含有酚类及鞣质、多糖类、黄酮类化合物、植物甾醇等活性成分。

Abstract

The paper studied the antioxidant activity of the 75% ethaonlic extracts from different parts of Lentinus edodes by using the assays of POV valve,·OH and O2-.free radical scavenging and reducing power.The results showed that the both ethaonlic extracts exhibited excellent antioxidation activity,but they were not consistant in the different system.The preliminary chemical test indicated that the extracts contain phenolic compounds,tannins,polysaccharides,flavonoids,phytosterols,etc.
