摘要

为了研制高活性的乳酸菌载体颗粒,以保加利亚乳杆菌为研究对象,分别以琼脂和海藻酸钠为菌体包埋材料,通过菌体包埋、载体制备和载体培养等方面条件研究,结果表明:海藻酸钠包埋菌体效果优于琼脂,其载体的最佳培养条件为:1%海藻酸钠,用1%CaCl2固化;将载体置于含1%CaCO3的培养基中,41℃、培养20 h左右时,载体中活菌数可高达2.2×1011CFU/g。

Abstract

In order to develop the high-activity lactic acid bacteria carrier particles,we used Lactobacillus bulgaricus as study object and agar and sodium alginate being the cell encapsulation materials respectively.This article focuses on the following conditions: cell encapsulation,carrier preparation and carrier culture and so on.The results show that: the encapsulation effect by sodium alginate is better than agar and the optimum culture conditions is : 1% sodium alginate solidified by1% CaCl2;with placing the carrier into the culture medium containing 1% CaCO3,41℃ and 20 hours more or less,total viable count in the carrier is up to 2.2×1011CFU/g.
