采用L-抗坏血酸结合六偏磷酸钠浸提法制备马铃薯渣水溶性膳食纤维,通过考察液料比、六偏磷酸钠浓度、提取时间、提取温度、助剂L-抗坏血酸用量对提取率的影响,获得了马铃薯渣水溶性膳食纤维的最佳提取工艺:即在质量分数为0.5%的六偏磷酸钠溶液150 mL中加入5.0 g马铃薯淀粉渣和75 mg助剂;沸水浴条件下处理2.5 h;乙醇用量为150 mL时,SDF产率最高可达43.4%,比未加L-抗坏血酸的SDF产率35.0%高。所得产品在pH=7,37℃条件下具有良好的水溶性、持水力和膨胀力,分别为56.15%、7.72 g/g和7.56 mL/g。制得的SDF具有口感细腻、微咸的特点,乳白色,可广泛应用于焙烤、馅料、汤料、果酱等食品工业中。
In this paper,soluble dietary fiber from potato pulp was extracted by using L-ascorbic acid and sodium hexametaphosphate method.Its functional characteristics were also investigated,such as expansibility,retention ability,water solubility.The optimization processing were studied by the comparison of the ratio of solution and the dregs,the concentration of sodium hexametaphosphate(SHMP),promoter L-ascorbic acid,the extraction temperature and time,the ratio of ethanol volume(the filtrate to liquid).The optimum extraction conditions were: mixed with 0.5% sodium hexametaphosphate solution and 75 mg of L-ascorbic acid as promoter at the ratio of 30:1.The mixture was kept at 95℃ for 2.5h,and the ratio of ethanol volume(the filtrate to liquid) was 1:1.The soluble dietary fiber was thus extracted with the yield of 43.4%.The soluble dietary fiber from potato pulp had good water solubility(56.15%),expansibility(7.72 g/g) and retention ability(7.56 mL/g) in pH 7 at 37℃.
