摘要

天然提取的食品保鲜剂越来越受到人们的关注,葡萄籽提取物含有大量多酚类物质,具有抗氧化和抗菌活性,能够降低肉制品中脂质氧化,抑制有害微生物的生长。文中主要介绍葡萄籽提取物的保鲜机理及其在肉制品保鲜中的应用。

Abstract

More and more people pay attention to the natural extracts of food preservatives.Grape seed extract is a rich source of polyphenolic compounds which possess the properties of antioxidant and antibacterial.GSE has been shown to be effective in reducing the lipid oxidation products and inhibiting the growth of spoilage organisms.This review summarizes the current knowledge on the possible mechanisms of the action of GSE and its applications in meat.
