多重免疫层析检测技术在食品安全快速检测中的研究进展

摘要

随着农业及食品行业突飞猛进地发展,随之产生的多种有毒有害物质共存于食品样品中的问题日趋严重,对人类健康及经济发展造成巨大威胁,开发同时检测多重危害物的高效快速检测平台对于保障食品安全具有重要的现实意义。基于抗原抗体特异性反应的多重免疫层析快速检测技术因具有成本低廉、便携快速等特点,且可进一步提高检测效率,同时能够提供更为丰富准确的样品信息,为食品中多种危害物的同时检测提供了技术保障。文章首先综述了不同标记材料在多重免疫层析检测技术中的应用,并就多重免疫层析检测技术于食品中有毒有害物质如真菌毒素、食源性致病菌、农兽药残留等的检测应用进行总结与分析,最后对其在食品安全快速分析检测中面临的挑战和发展前景做出讨论,以期为食品安全多重快速检测方法的建立提供参考。

Abstract

With the rapid development of industry, agriculture, and food related industries in recent years, the problem that many toxic and harmful substances coexist in food samples has become increasingly serious, which poses a great threat to human health and economic development. Therefore, the development of an efficient and rapid detection platform for simultaneous detection of multiple hazards has important practical significance for ensuring people's food safety. The rapid detection technology of multiple immunochromatography assay based on antigen antibody specific reaction has the characteristics of low cost, portability, and rapidity, which can further improve the detection efficiency and provide more abundant and accurate sample information, and also providing technical guarantee for the simultaneous detection of multiple hazardous substances in food. Firstly, the application of different labeling materials in the detection of multiple immunochromatography assay is reviewed, and then the application of multiple immunochromatography assay in the detection of toxic and harmful substances in food, such as mycotoxins, foodborne pathogenic bacteria, and residues of agricultural and veterinary drugs, is summarized and analyzed. Finally, the challenges and development prospects in the rapid analysis and detection of food safety are discussed, in order to provide reference for the establishment of multiple rapid detection methods for food safety.
