褪黑素处理对金针菇贮藏品质和褐变的影响

摘要

为探究褪黑素处理对采后金针菇低温贮藏品质和褐变的影响,该研究以金针菇为原料,分别采用50、100、200 mmol/L褪黑素溶液浸泡处理(以清水浸泡为对照),于4 ℃下贮藏12 d,每3 d取样并测定相关理化指标。结果表明,与对照相比,不同浓度的褪黑素处理均能显著降低金针菇褐变度和失重率,显著抑制呼吸强度的升高,显著抑制可溶性固形物和抗坏血酸含量的下降,显著提高超氧化物歧化酶、过氧化物酶、过氧化氢酶活性,维持较高的总酚含量,增强金针菇清除活性氧自由基的能力,降低·O2-、H2O2的产生和积累,显著抑制苯丙氨酸解氨酶和多酚氧化酶活性,减轻褐变的发生,从而维持金针菇较好的贮藏品质。其中,以200 mmol/L褪黑素处理金针菇的效果最优,该研究可为金针菇的贮藏保鲜提供一定的参考依据。

Abstract

To investigate the effects of melatonin treatment on preserving quality and browning of postharvest Flammulina velutipes during low-temperature storage, Flammulina velutipes were treated with 50, 100, and 200 mmol/L melatonin solution (water immersion treatment as control), respectively, and then stored at 4 ℃ for 12 days.Samples were taken every 3 days and related physical and chemical indexes were measured.Results indicated that different concentrations of melatonin treatment could significantly reduce the browning degree and weight loss rate of Flammulina velutipes, reduce the increase of the respiration rate, effectively inhibit the decrease of soluble solids content and ascorbic acid content, and maintain good storage quality of Flammulina velutipes.Melatonin treatment remarkably improved the activities of superoxide dismutase, peroxidase, and catalase of Flammulina velutipes, and maintained higher total phenol contents, which could enhance the ability of Flammulina velutipes to eliminate reactive oxygen free radicals and reduce the accumulation of superoxide anion and hydrogen peroxide.Moreover, melatonin treatment could significantly inhibit the activities of phenylalanine ammonia-lyase and polyphenol oxidase, and reduce the occurrence of browning, which contributed to maintaining the good storage quality of Flammulina velutipes.Among them, 200 mmol/L melatonin was found to have the best effect on the quality of Flammulina velutipes.This study can provide a certain reference for storing Flammulina velutipes.
