为了探讨浸提红枣汁可溶性固形物的工艺条件,在比较了不同处理方法浸提效果的基础上,采用正交试验优化了超声波辅助果胶复合酶同步浸提红枣汁的工艺条件;优化结果为:加酶量320μL/g,加水量5mL/g,超声波功率125W,处理温度35℃,时间20min,在此条件下得到的可溶性固形物浸提率为80.35%。同时缩短了浸提时间,减少了能量损耗,用水量也较超声波法浸提明显减少,效果明显优于超声波和果胶复合酶单独浸提红枣汁的效果。
In order to search for the optimum conditions of extraction of soluble solid of Jujube juice,we conducted preliminary comparison between different treatment methods of extraction,and then performed orthogonal experiment under Optimal Process Conditions by using ultrasoound and pectinase at the same time.The optimum conditions were as follow:enzyme dosage 320μL/g,adding water 5mL/g,supersonic capacity of 125 W,temperature 35℃,and time 20min.Under these conditions,the extraction rate of soluble solid of Jujube juice was 80.35%.Time of extraction and energy loss were reduced greatly,and water consumption was reduced as well,significantly shorter than that of ultrasonic extraction method.It thus proved that the combined extraction method to make Jujube juice is more effective than either ultrasound or pectinase.
