以甘蔗汁为培养基,以泡沫多孔陶瓷为固定化载体,对1株适合乙醇发酵酵母的耐酒精性、耐糖性和耐酸性进行了研究。对固定化发酵条件即发酵温度、发酵液初始pH值、发酵液初始糖锤度进行优化,并在优化条件下进行验证试验。结果表明,该菌株可以耐受16%的乙醇;在pH2的情况下仍可生长繁殖;耐糖性为45%。在pH为4.5、发酵温度28℃,糖锤度18°BX条件下乙醇体积分数最高,为13.53%。
The fermentation characteristics of one yeast strain suitable to alcohol fermentation by sugar cane juice medium including resistance to alcohol,sugar and acid,were investigated in this paper.The optimization of fermentation conditions for immobilized yeast cells in the porous foamed ceramics,were carried out on fermentation temperature,pH value and brix of fermentation liquor.The results indicated that this yeast could tolerate 12% alcohol,low pH(2.5)and 45% sugar.The highest alcohol concentration was up to 13.53%(v/v)with initial pH(4.5)and brix(18)at 28℃.
